If payoff is in the bite, sazón is in the learning of the craft and the ingredients, the procedures and the ways. In Winston-Salem, North Carolina., Tin recognizes sazón in the masterstroke of Beto’s tacos. Recognizing and replicating, though, are hardly one and the same.
